Elegant, round and rich in substance. This wine sort from Bourgogne is considered to produce some of the finest wines in the world. At Balisiers, the chardonnay ferments in clay amphoras. It is raised at very low yield. Flavours of passion fruit, generous and round; of a very deep yellow colour. This wine goes well with mushroom (morels, boletus, chanterelles) fricassee, cooked or smoked salmon and all lake fish. It is also an ideal aperitif wine. Don’t drink before two years of ageing from harvest time on.

The sauvignon blanc has the particularity of being vinified without second (malolactic) fermentation, which permits it to keep all its vivacity. Perfect aperitif wine. Should not be drunk before two years of ageing.

Originally, Pinot Blanc came to us from Alsace and the Rhine banks, but for many years now it has managed to build itself a reputation as a wine from the Geneva region. Golden colour, balanced, flowery and endowed with a lovely acidity. Goes well with all white fish from the lake. Also great for aperitifs, with salted cookies and nuts. Has a potential of three years.

Its grapes are “vieux rose”, which gives this wine a slightly amber colour. Mango flavours, dry and slightly peppery. Perfect with vegetable terrines, escargots and liver paté. Ready to drink with a potential of three years.

Aligoté especially likes deep and chalky soils, as are those of Balisiers. Fruity, full of temperament, with slightly spicy notes and fragrances of lime. Perfect with all seafood, sea and lake fish and, in winter, for aperitifs. This is a very dry wine, which must be drunk well cooled.

This is one of the most popular wine sorts of the world, from California right down to Africa, via Eastern Europe, Alsace and Germany. It is the most precocious sort we have and we usually begin the harvest with it. At Balisiers, Riesling-Sylvaner has quite an elegant nutmeg taste. Perfect with starters or a cold buffet. Some drink it with crustaceans and other seafood, or even with some cheeses. Very pale yellow colour.

Chasselas is actually a table grape, but for some reason it has also become the “Swiss national wine sort”, representing still around 40% of the total Swiss vineyard. At Balisiers, we have kept a small vineyard, which we cut down to a very low yield. Its lime-tree blossom flavour goes well with the Swiss national cheese dishes such as Fondue, Raclette, and cheese rarebit. Must be drunk within two years.

This is a Rosé made of Gamay and, depending on the year, a touch of Pinot Noir. This wine must be served in an ice bucket and drunk at around 9°C. The particularly tender and fruity character of our Rosé originates from the fact that it is “bled” (saignée) after only one night of fermentation (cuvaison), without any pressing taking place.
This is a wine for summer meals and a great companion to exotic dishes (Indian, Chinese, Arab and kosher food).
Best drunk within two years of bottling.
