    Sauvignon Blanc

    The hallmark of our Sauvignon Blanc is that it is vinified without a second (malolactic) fermentation in order to preserve the fullness of its vivacious character. This variety is grown in the gravely soils of Plan-les-Ouates, on the left bank of the Rhône. Its pale colour gives nothing away of the explosion of exotic aromas that characterizes its nose! It is redolent of mango, lime and other tropical fruit. On tasting, it fully delivers on its promise of intensity, blending citrus fruit with efflorescence of black current.     Lune Rousse

    Gamaret is an original Swiss grape variety, a hybrid that was first bred towards the end of the 20th century by Switzerland’s Federal plant breeding/viticultural centre at Changins. It was initially used only in blends with Pinot Noir and Gamay. Over the past decade or so, however, it has gained ground across the Geneva vineyards in its own right. Our Lune Rousse is 100% Gamaret. It is the produce of some six acres planted with this variety near the Geneva suburb of Plan-les-Ouates. It is matured in our winery’s clay amphora for 15 months. Its characteristically dark red colour plays a prelude to its strong tannic expressiveness and low acidity. Lune Rousse makes a marvellous companion for various meat and spicy dishes (tartare, curries, Thai cuisine, venison stew). One taster, Oenologist Raul Cruchon in Echichens, described it as “The most wonderful Gamaret I have ever tasted!” Another, Sommelier Raymond Paccot of Féchy, exclaimed: “What a body! Such intensity and promise!” A third, the wine reviewer for the French daily Le Monde, commented: “This is an unusual wine … still imbued with the subtlety of its primeval substance, tannins just begging to turn smooth, a dry essence with incredibly potent aromatic potential … Amazingly successful, a great wine for ageing.”

    Lune Rousse

    Chenin blanc

    In 2004, the Domaine des Balisiers decided to plant a new white grape variety experimentally. After numerous tastings and a thorough investigation of the characteristics of our soils, we decided to try the traditional variety of the Loire valley, namely, Chenin. This was to be the first such experiment in Switzerland. In 2004-05, we thus planted three hectares of Chenin Blanc from the massale selection of the Gibault nursery at Jugné sur Loire, which we trained and pruned in the open lyre shape. Our Chenin Blanc is matured for 12 months in clay amphora without undergoing malolactic fermentation in order to preserve the best of its freshness. This successful experiment has enabled us to produce two radically different white varietals. The first is dry and mineral, while the second, made from late-picked grapes, is our only sweet white wine.

    Cuvée Nina

    This Chenin Blanc varietal is the colour of straw, with slightly silvery hues of green. The generous fruitiness of its nose blends in harmoniously with the toasty, vanilla aromas imparted by its 18-month vinification in oversized oak barrels. On tasting, the first impression is one of intensity, followed by a rich substance balanced between fruity notes and the effects of vinification blended into the very structure of the wine. This varietal is amazingly well balanced in spite of its powerful complexity. At the time of tasting, it delivered impressive length but lacked a touch of freshness to bring out the fullness of its potential depth.

It has a lively attack with a zesty fresh acidity. The pear note remains on the palate accompanied by hints of honey and fennel. This wine can be enjoyed young and is ideally paired with red mullet en papillote and purple artichokes, mussels cooked with white wine and shallots, or monkfish tartar with fennel.     Our Comte de Peney is the result of over a decade of experimental research to adapt Cabernet varieties from Bordeaux to the climate and soils of the Geneva area. It is a blend of two-thirds Cabernet Sauvignon and one-third Cabernet Franc, produced from extremely low yields (30 hectolitres per hectare). Great vintages of Comte de Peney can keep for 20 years or longer. Our Balisier Collection offers wine-lovers the opportunity to purchase most vintages back to 1989 in their original cases. Comte de Peney is matured for 18-24 months in clay amphora. It features an incomparably broad range of flavours and rich complexity. The blend has an alcohol titre of 13° at least. Its deep red, purply colour is intensely expressive: a brilliant disk with shimmering hues of ruby. The nose is a delicate balance of immature leather and berries steeped in spirit. On tasting, the first impression is clean, again with dominant flavours of red berries, particularly kirsch-steeped cherries. The taste then narrows down, still with its powerful tannins, but combining notes of tobacco and gentle spiciness. Comte de Peney is a wine for special occasions, an ideal match for the most refined cuisine.
