Originally grown for its grapes as fruit, this variety still accounts for some 40 per cent of the total acreage of Swiss vineyards. At the Domaine des Balisiers, however, it is something of a “residual”. In order to give it more substance, its yields are strictly controlled, at 70 hectolitres per hectare. It is a pale golden yellow. Its flowery nose features dominant notes of camomile and lime-tree blossom. It makes a good aperitif white but it also goes well with fondue, raclette, cheeseburger and other cheese-based dishes. We recommend drinking within about two years of the harvest depending on the vintage.
Pinot Gris grapes are instantly recognizable from their pinkish hues, which give the pressed juice an amber colouring with a faint tinge of orange. At the Domaine des Balisiers, this variety is exclusively cultivated in carefully selected soils within the Peissy appellation of origin and at the Château de Sierne. Our varietal Pinot Gris is pale with a greenish sparkle. It is very full-bodied with sweet notes of golden apple and pineapple underscored by remarkable strength. The finale is fresh and lemony: “… finesse, purety and harmony!” (24h) This wine makes a particularly good aperitif, but it is also often served with vegetable terrines, foie gras, arctic char or filleted perch. It can be enjoyed young but has an ageing potential of three years.
Comte de Peney
Our Comte de Peney is the result of over a decade of experimental research to adapt Cabernet varieties from Bordeaux to the climate and soils of the Geneva area. It is a blend of two-thirds Cabernet Sauvignon and one-third Cabernet Franc, produced from extremely low yields (30 hectolitres per hectare). Great vintages of Comte de Peney can keep for 20 years or longer. Our Balisier Collection offers wine-lovers the opportunity to purchase most vintages back to 1989 in their original cases. Comte de Peney is matured for 18-24 months in clay amphora. It features an incomparably broad range of flavours and rich complexity. The blend has an alcohol titre of 13° at least. Its deep red, purply colour is intensely expressive: a brilliant disk with shimmering hues of ruby. The nose is a delicate balance of immature leather and berries steeped in spirit. On tasting, the first impression is clean, again with dominant flavours of red berries, particularly kirsch-steeped cherries. The taste then narrows down, still with its powerful tannins, but combining notes of tobacco and gentle spiciness. Comte de Peney is a wine for special occasions, an ideal match for the most refined cuisine.
