    Chenin blanc

    In 2004, the team of Balisiers decided to proceed to a new experience of white encépagement. After multiple tastings, a systematic study of the potentialities of our terroir at Château Barillet and Vallon de l'Allondon (Russin), we chose the Loire's historical grape variety: Chenin Blanc. First in Switzerland, 3 hectares of Chenin Blanc from the mass selection of Gibault nurseries (Jugné sur Loire) were planted in 2004 and 2005 with an open lyre trellis. Chenin is aged 12 months in amphora without malolactic fermentation to keep all its freshness. The Chenin Blanc will allow us to raise two types of radically different wines: a dry white wine and mineral and our first sweet wine (noble grains) from sorting in late harvests.

Nose Beautiful wine of complexity, a Chenin Blanc combining gourmand fruit and well harmonized by connotations toasted, vanilla brought by the aging of 18 months in half muid.
