    Chasselas

    Originally grown for its grapes as fruit, this variety still accounts for some 40 per cent of the total acreage of Swiss vineyards. At the Domaine des Balisiers, however, it is something of a “residual”. In order to give it more substance, its yields are strictly controlled, at 70 hectolitres per hectare. It is a pale golden yellow. Its flowery nose features dominant notes of camomile and lime-tree blossom. It makes a good aperitif white but it also goes well with fondue, raclette, cheeseburger and other cheese-based dishes. We recommend drinking within about two years of the harvest depending on the vintage.

However, the soils of the Geneva countryside now also yield a particularly fruity Gamay. Some Geneva vineyards, such as those around Peney and Peissy, produce a Gamay that can be vinified to keep for five years or longer. Like all the other reds from the Domaine des Balisiers, our varietal Gamay is matured for a year at the winery before it goes on the market. Gamay is the leading red varietal produced by Geneva winemakers. It is primarily a mealtime wine to accompany cold-cuts, white meats and poultry. Unlike most reds, it can be served slightly chilled. It is a ruby-coloured wine with a distinctive fruitiness, typically featuring notes of raspberry and blackberry.

Its particularly tender fruitiness owes much to the fact that it is vinified from juice drawn off after the grapes have spent only a few hours in the tank. Its rosy salmon surface is transluscent, with hues of orange. The nose is an aromatic explosion of apricot, pineapple, lichee and peach. Rose de Lune is a wine for summertime meals and a delightful companion for Asian cuisine. It should ideally be chilled to 9-11° in an ice bucket before serving.

It is currently one of the world’s most widely cultivated white grape varieties, from California to South Africa, eastern Europe, Alsace, Germany and elsewhere. The Riesling-Sylvaner from Les Balisiers features an elegant note of muscat. It is the most precocious variety grown on our estate, and typically the first to be harvested. Indeed, it needs to be harvested early so as to preserve its natural acidity. It is a very pale yellow. It is best served chilled as an aperitif, and it makes a harmonious companion for cold cuts or finger-foods. It is also thoroughly enjoyable with seafood and even with cheese dishes, as an alternative to Chasselas.

    Aligoté is one of the traditional white varieties of Burgundy. It thrives in deep soils with a little limestone and has accordingly developed into a local specialty of the Geneva vineyards. The vine is easy to identify from its luxuriant foliage and reddish shoots. Fruity and full of character, our Aligoté features faint notes of spiciness and lime. It goes particularly well with all seafood dishes and fish, also making a good aperitif in the Winter months. It is a dry wine, a specialty that needs to be well chilled before serving. One wine critic praised its “aromas of ripe fruit underscored by a melliferous note” (24h). To quote another: “in the deep soils of the left bank of the Rhône, on the hillsides of Lully and Perly, this variety matures exceptionally well. This white has a wonderful freshness with just the right touch of acidity” (Basler Zeitung, Wine of the Week).

    Pinot Gris grapes are instantly recognizable from their pinkish hues, which give the pressed juice an amber colouring with a faint tinge of orange. At the Domaine des Balisiers, this variety is exclusively cultivated in carefully selected soils within the Peissy appellation of origin and at the Château de Sierne. Our varietal Pinot Gris is pale with a greenish sparkle. It is very full-bodied with sweet notes of golden apple and pineapple underscored by remarkable strength. The finale is fresh and lemony: “… finesse, purety and harmony!” (24h) This wine makes a particularly good aperitif, but it is also often served with vegetable terrines, foie gras, arctic char or filleted perch. It can be enjoyed young but has an ageing potential of three years.

Our Pinot Blanc thrives on the east bank of the Rhône, a few miles south of Geneva near the hamlet of Perly and by the Château de Sierne at Veyrier. This varietal features translucent lemony hues and a dominant aroma of golden apple. On tasting, it goes on to deliver a wonderful balance of flavours, starting with a clean bright freshness, moving to a full-bodied middle of sweet fruitiness and ending with a touch of citrus. It makes a good aperitif wine, but it is also a remarkable match for salmon carpaccio with lime juice, vegetarian Quiche or white lake-fish. Recommended drinking is three years after bottling.

Ilôt Noir spends three weeks in fermentation tanks in order to maximize its concentration by enhancing its tannins, substance and colouring. It is then matured for a year in large oaken barrels (“foudres”) for micro-oxygenation and aromatic subtlety, and subjected to minimal filtration. With its garnet-red colour, this Pinot Noir varietal features a nose of remarkable freshness, fragrant with raspberry. On tasting, its flavours strike a harmonious balance between subtlety and the smoothness of silky tannins. It holds the promise of great potential for ageing.

    Dame Noire

    Dame Noire is an original red blend developed in our winery at the Domaine des Balisiers. Virtually all Swiss winemakers stopped maturing their wines in vats during the Second World War because oak could no longer be imported and coopers simply went out of business for want of raw material. In 1985, the Domaine des Balisiers was one of the first wine-making estates to resurrect this traditional method of vinification when it started to produce Dame Noire. The actual proportions of the blend vary with the characteristics of each vintage, but the varieties are consistently Gamay, Pinot Noir and Gamaret. Its deep, dark-red colour is simply superb. Its delicate nose is a perfect balance of fruitiness and spicy lift. On tasting, it is generously full-bodied but entirely without heaviness, combining a soft flavour of black-current with empyreumatic notes. The middle is a full-bodied concentration of rounded fruitiness gently blending with subtle oakiness all the way to the finale. Matured for a full year in oak vats, our Dame Noire is indeed a wine for keeping that develops a oaky note with vanilla-like aromas. It should ideally be allowed five to ten years in a good wine cellar before drinking. It is a mealtime wine that goes particularly well with red meat, BBQs and venison.

Our Chardonnay’s exuberant nose is all about vineyard blood-peach, apricot and golden apple. From initial freshness, its taste develops into silkiness with an elegant full-bodied texture and buttery notes of yellow flowers. The long finale brings up a mineral touch. It will happily accompany a dish of sauted forest mushrooms, salmon carpaccio, smoked salmon or any lake fish. It also makes an ideal aperitif wine.

It is redolent of mango, lime and other tropical fruit. On tasting, it fully delivers on its promise of intensity, blending citrus fruit with efflorescence of black current. Also notable are its full-bodied texture and long finale of freshness. “The Sauvignon Blanc, which grows so well in the Geneva canton, was highly enjoyable on account of its aromatic complexity combining black-current efflorescence, elderberry flower and tomato leaf, blending into vivid expressiveness and the varietal’s characteristic freshness” (24h)
